Crispy Buffalo Chicken Tenders


Ingredients:

  • 1 pound chicken tenders
  • 1 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 large eggs
  • 1 cup breadcrumbs (panko or regular)
  • 1 cup buffalo sauce
  • 2 tablespoons olive oil (for frying)
  • 1 tablespoon butter (optional, for mixing with buffalo sauce)


Directions:

  1. Preheat your oven to 400°F (200°C) if baking.
  2. In a shallow dish, mix flour, garlic powder, onion powder, paprika, salt, and black pepper.
  3. In another shallow dish, beat the eggs.
  4. In a third dish, place the breadcrumbs.
  5. Dredge each chicken tender in the flour mixture, dip in the egg, then coat with breadcrumbs.
  6. Heat olive oil in a large skillet over medium heat.
  7. Add the breaded chicken tenders to the skillet and cook for 3-4 minutes per side, or until golden brown and cooked through.
  8. If baking, place the breaded tenders on a baking sheet and bake for 20-25 minutes, flipping halfway through.
  9. In a small saucepan, melt butter over low heat (if using) and then mix with buffalo sauce.
  10. Toss the cooked chicken tenders in the buffalo sauce mixture until evenly coated.
  11. Serve with ranch or blue cheese dressing and celery sticks, if desired.
