Holiday Roll Ups

 


Ingredients

  • 8 oz cream cheese, softened
  • 1/2 cup ranch dressing
  • 1/2 cup red bell pepper, finely chopped
  • 1/2 cup green bell pepper, finely chopped
  • 4 large flour tortillas
  • 1/4 cup green onions, finely chopped (optional)


Instructions

Prepare the filling:

In a mixing bowl, combine the softened cream cheese and ranch dressing. Stir until smooth and well blended.

Add vegetables:

Fold in the finely chopped red and green bell peppers (and green onions if using) into the cream cheese mixture.

Assemble the roll ups:

Spread a thin layer of the cream cheese mixture onto each tortilla, covering the entire surface.

Roll up tortillas:

Carefully roll up each tortilla tightly, making sure the filling stays inside.

Chill:

Wrap the rolled tortillas in plastic wrap and refrigerate for at least 30 minutes to allow the filling to firm up.

Slice and serve:

Once chilled, slice the roll ups into 1-inch pieces. Arrange them on a platter and serve. Enjoy!
