Crispy Potato Latkes

 

Ingredients:

  • 4 large russet potatoes, peeled and grated 
  • 1 small onion, grated 
  • 2 large eggs 
  • 1/4 cup all-purpose flour 
  • Salt and pepper, to taste 
  • 1/2 tsp baking powder (optional, for extra fluffiness)
  • Vegetable oil, for frying 
  • Creamy Dipping Sauce 
  • 1/2 cup sour cream 
  • 2 tbsp mayonnaise
  • 1 clove garlic, minced 
  • 1 tbsp fresh chives or green onions, chopped 
  • Salt and pepper, to taste 
  • Squeeze of lemon juice (optional, for extra tang)


Instructions:

Prepare the Latke Batter:

  1. Using a clean kitchen towel, squeeze out excess moisture from the grated potatoes and onion. This helps ensure crispy latkes.
  2. In a large bowl, combine the grated potatoes, onion, eggs, flour, salt, pepper, and baking powder (if using). Mix until well combined.

Fry the Latkes:

  1. In a large skillet, heat about 1/4 inch of vegetable oil over medium-high heat.
  2. Scoop about 2 tablespoons of the potato mixture into the skillet, flattening each latke with a spatula.
  3. Fry for 3-4 minutes on each side, until golden brown and crispy. Transfer to a paper towel-lined plate to drain any excess oil.

Make the Creamy Dipping Sauce:

  1. In a small bowl, whisk together the sour cream, mayonnaise, minced garlic, chives or green onions, salt, pepper, and a squeeze of lemon juice (if using). Adjust seasoning to taste.

Serve:

  1. Serve the latkes hot with the creamy dipping sauce on the side. Garnish with extra chives or green onions if desired.
