Ingredients:
- 4 large russet potatoes, peeled and grated
- 1 small onion, grated
- 2 large eggs
- 1/4 cup all-purpose flour
- Salt and pepper, to taste
- 1/2 tsp baking powder (optional, for extra fluffiness)
- Vegetable oil, for frying
- Creamy Dipping Sauce
- 1/2 cup sour cream
- 2 tbsp mayonnaise
- 1 clove garlic, minced
- 1 tbsp fresh chives or green onions, chopped
- Salt and pepper, to taste
- Squeeze of lemon juice (optional, for extra tang)
Instructions:
Prepare the Latke Batter:
- Using a clean kitchen towel, squeeze out excess moisture from the grated potatoes and onion. This helps ensure crispy latkes.
- In a large bowl, combine the grated potatoes, onion, eggs, flour, salt, pepper, and baking powder (if using). Mix until well combined.
Fry the Latkes:
- In a large skillet, heat about 1/4 inch of vegetable oil over medium-high heat.
- Scoop about 2 tablespoons of the potato mixture into the skillet, flattening each latke with a spatula.
- Fry for 3-4 minutes on each side, until golden brown and crispy. Transfer to a paper towel-lined plate to drain any excess oil.
Make the Creamy Dipping Sauce:
- In a small bowl, whisk together the sour cream, mayonnaise, minced garlic, chives or green onions, salt, pepper, and a squeeze of lemon juice (if using). Adjust seasoning to taste.
Serve:
- Serve the latkes hot with the creamy dipping sauce on the side. Garnish with extra chives or green onions if desired.
- These Crispy Potato Latkes are crispy on the outside and tender inside, perfect with the tangy, creamy dipping sauce. Enjoy this treat!
