Ingredients:
- 1 lb ground beef
- 1/2 lb ground pork
- 1 cup breadcrumbs
- 1 small onion, finely chopped
- 1/2 cup milk
- 1 large egg
- 1/2 cup shredded cheddar cheese
- 1/4 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 tbsp Worcestershire sauce
- 1 tsp salt
- 1/2 tsp black pepper
- 1 tbsp fresh thyme, chopped
- 1/2 cup ketchup
- 2 tbsp honey
Instructions:
- Preheat the oven to 350°F (175°C). Grease a loaf pan or line it with parchment paper.
- Prepare the meatloaf mixture: In a large bowl, combine the ground beef, ground pork, breadcrumbs, chopped onion, milk, egg, cheddar cheese, Parmesan cheese, garlic, Worcestershire sauce, salt, pepper, and thyme. Mix everything together until just combined.
- Shape and bake: Transfer the mixture into the loaf pan and press it into an even loaf shape. Bake in the preheated oven for 45-50 minutes, or until the meatloaf is cooked through (internal temperature should reach 160°F / 71°C).
- Make the glaze: While the meatloaf bakes, mix the ketchup and honey in a small bowl. Set aside.
- Glaze the meatloaf: After the meatloaf is cooked, remove it from the oven. Brush the top with the ketchup-honey glaze, then return it to the oven for an additional 10 minutes, or until the glaze is bubbly and caramelized.
- Serve: Allow the meatloaf to rest for a few minutes before slicing. Garnish with extra fresh thyme if desired.
