Juicy chicken breasts stuffed with creamy cheddar, cream cheese, and tender broccoli—an easy, flavorful dinner!
Ingredients
• 4 large boneless, skinless chicken breasts
• 3 cups broccoli florets
• 1½ cups shredded cheddar cheese
• 2 oz cream cheese, room temp
• 1 tbsp chopped fresh chives (or other herbs)
• ¼ cup olive oil, divided
• Garlic powder, cumin, salt & pepper (to taste)
Instructions
1. Preheat oven to 400°F (200°C).
2. Steam broccoli: Microwave florets with 2 tbsp water (2 min). Drain & chop finely.
3. Make filling: Mix broccoli, cheddar, cream cheese, chives, ¼ tsp salt & pepper.
4. Prep chicken: Slice a pocket into each breast, being careful not to cut through. Stuff with filling.
5. Season chicken with garlic powder, salt, pepper & preferred spices.
6. Sear chicken: Heat ½ of the olive oil in an ovenproof skillet over medium heat. Sear chicken 3 min per side until golden.
7. Bake for 10-15 min until internal temp reaches 165°F (74°C).
8. Rest & serve with roasted veggies or a fresh salad.
