Old-Fashioned Buttermilk Pancakes


Ingredients:  

  • - 2 cups all-purpose flour  
  • - 2 tablespoons granulated sugar  
  • - 2 teaspoons baking powder  
  • - 1/2 teaspoon baking soda  
  • - 1/2 teaspoon salt  
  • - 2 large eggs  
  • - 2 cups buttermilk  
  • - 1/4 cup unsalted butter, melted, plus more for cooking  


Instructions:  

  1. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.  
  2. In a separate bowl, beat the eggs and mix in the buttermilk and melted butter until well combined.  
  3.  Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. The batter will be slightly lumpy; do not overmix.  
  4. Heat a large skillet or griddle over medium heat and lightly coat with butter.  
  5. Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.  
  6. Flip the pancakes and cook for an additional 2-3 minutes, or until golden brown on both sides.  
  7. Serve warm with butter, syrup, or your favorite toppings.
