Ingredients:
- - 2 cups all-purpose flour
- - 2 tablespoons granulated sugar
- - 2 teaspoons baking powder
- - 1/2 teaspoon baking soda
- - 1/2 teaspoon salt
- - 2 large eggs
- - 2 cups buttermilk
- - 1/4 cup unsalted butter, melted, plus more for cooking
Instructions:
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, beat the eggs and mix in the buttermilk and melted butter until well combined.
- Gradually add the wet ingredients to the dry ingredients, stirring gently until just combined. The batter will be slightly lumpy; do not overmix.
- Heat a large skillet or griddle over medium heat and lightly coat with butter.
- Pour 1/4 cup of batter onto the skillet for each pancake. Cook until bubbles form on the surface and the edges look set, about 2-3 minutes.
- Flip the pancakes and cook for an additional 2-3 minutes, or until golden brown on both sides.
- Serve warm with butter, syrup, or your favorite toppings.
