Classic Fried Chicken Legs with Creamy Mashed Potatoes

Ingredients:

  • For the Chicken Legs:
  • - 8 chicken drumsticks
  • - 1 cup all-purpose flour
  • - 1 teaspoon salt
  • - 1/2 teaspoon black pepper
  • - 1/2 teaspoon paprika
  • - 1/2 teaspoon garlic powder
  • - 1/2 teaspoon onion powder
  • - 1/2 cup buttermilk (or regular milk with a splash of lemon juice)
  • - Oil for frying

For the Mashed Potatoes:

  • - 4 large potatoes, peeled and cubed
  • - 1/4 cup butter
  • - 1/2 cup milk or cream (adjust for desired creaminess)
  • - Salt and pepper to taste
  • - Fresh parsley, chopped (for garnish)

Directions:

1. Prepare the Chicken Legs:

   - In a shallow dish, mix flour, salt, black pepper, paprika, garlic powder, and onion powder.

   - Dip each chicken drumstick into the buttermilk, then coat in the seasoned flour mixture. Press lightly to ensure an even coating.

   - Heat oil in a deep skillet over medium-high heat. Fry the drumsticks for 12-15 minutes, turning occasionally, until golden brown and fully cooked. Drain on paper towels.

2. Make the Mashed Potatoes:

   - Place the cubed potatoes in a large pot of salted water. Bring to a boil and cook for 15-20 minutes, or until tender.

   - Drain the potatoes and return to the pot. Add butter, milk, salt, and pepper, and mash until smooth and creamy. Adjust the milk for desired consistency.

3. Serve:

   - Plate the crispy fried chicken legs alongside a generous serving of mashed potatoes. Garnish with chopped parsley.

Enjoy your hearty meal!
