This creamy bacon potato soup is a comforting dish packed with flavor. This is perfect for cold days and makes a hearty meal!
Ingredients :
- 4 large russet potatoes, peeled and diced
- 6 slices of bacon mince
- 1 medium onion, diced
- 3 minced garlic cloves
- 4 cups of chicken or vegetable broth
- 1 cup heavy cream (or milk for a lighter option)
- 1 teaspoon dried thyme (optional)
- Salt and pepper to taste
- Chopped green onions or chives, for garnish
- Shredded cheddar cheese to serve (optional)
Instructions :
Cook the bacon:
In a large pot or Dutch oven, cook the chopped bacon over medium heat until crispy. Remove the bacon and put it aside on a paper towel. Leave about 2 tablespoons of bacon in the pot.
Stir up the vegetables:
In the same saucepan, add the onion and cook until just tender, about 5 minutes. Add the minced garlic and cook for another minute until just tender.
Add potatoes and broth:
Add dice potatoes, chicken or vegetable broth, and dried thyme (if using any) to the pot. Bring to a boil, then reduce heat and let simmer until potatoes are tender, about 15-20 minutes.
Stir the soup:
Using an immersion blender, blend the soup until smooth. You can also transfer half the soup to a blender and blend until smooth, then return it to the pot. (For a chunkier texture, mix only one serving. )
Stir in the cream:
Stir in heavy cream and season with salt and pepper to taste. Let soup simmer for another 5 minutes.
Serve :
Put the soup in bowls and top with crispy bacon, chopped green onion or chives and shredded cheddar cheese if desired.
