Ricotta Spinach Stuffed Chicken


Juicy chicken breasts filled with a creamy ricotta-spinach mixture, then baked to perfection — a delicious and impressive meal!


Ingredients:

  • 4 boneless, skinless chicken breasts
  • 1 cup ricotta cheese
  • 1 cup fresh spinach, chopped
  • 1/2 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 1 clove garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 tablespoon olive oil


Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix ricotta cheese, chopped spinach, mozzarella, Parmesan, garlic, Italian seasoning, salt, and pepper.
  3. Cut a pocket into the side of each chicken breast, being careful not to slice all the way through.
  4. Stuff each chicken breast with the ricotta-spinach mixture and secure with toothpicks if needed.
  5. Season the outside of the chicken breasts with salt and pepper.
  6. Heat olive oil in a skillet over medium-high heat. Sear the stuffed chicken breasts for 2-3 minutes on each side until golden.
  7. Transfer the chicken to a baking dish and bake for 20–25 minutes, or until cooked through.
