Juicy chicken breasts filled with a creamy ricotta-spinach mixture, then baked to perfection — a delicious and impressive meal!
Ingredients:
- 4 boneless, skinless chicken breasts
- 1 cup ricotta cheese
- 1 cup fresh spinach, chopped
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1 clove garlic, minced
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- 1 tablespoon olive oil
Instructions:
- Preheat your oven to 375°F (190°C).
- In a bowl, mix ricotta cheese, chopped spinach, mozzarella, Parmesan, garlic, Italian seasoning, salt, and pepper.
- Cut a pocket into the side of each chicken breast, being careful not to slice all the way through.
- Stuff each chicken breast with the ricotta-spinach mixture and secure with toothpicks if needed.
- Season the outside of the chicken breasts with salt and pepper.
- Heat olive oil in a skillet over medium-high heat. Sear the stuffed chicken breasts for 2-3 minutes on each side until golden.
- Transfer the chicken to a baking dish and bake for 20–25 minutes, or until cooked through.
