Broccoli and Mushrooms Stir Fry Recipe


 

Ingredients:

  • 1 tablespoon olive oil (or sesame oil for a more Asian flavor)
  • 1 small head of broccoli, cut into florets
  • 8 ounces mushrooms (cremini, shiitake, or a mix), sliced
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced or grated
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 2 tablespoons rice vinegar
  • 1 tablespoon honey or maple syrup (for a touch of sweetness)
  • 1 teaspoon sesame seeds
  • 1/2 teaspoon red pepper flakes (optional, for heat)
  • Cooked rice, for serving
  • Cashews, for garnish (optional)


Instructions:

Prepare the sauce: In a small bowl, whisk together the soy sauce, rice vinegar, honey (or maple syrup), and set aside.

Stir-fry the broccoli: Heat the olive oil in a large skillet or wok over medium-high heat. Add the broccoli florets and stir-fry for 3-4 minutes, until they start to become tender-crisp and slightly charred in some spots.

Add mushrooms: Add the sliced mushrooms to the skillet and continue to stir-fry for another 4-5 minutes, until the mushrooms have softened and browned.

Add garlic and ginger: Stir in the minced garlic and ginger, and cook for another minute until fragrant.

Pour in the sauce: Pour the prepared sauce over the vegetables and bring to a simmer. Cook for 1-2 minutes, allowing the sauce to thicken slightly.

Finish with sesame seeds and red pepper flakes: Stir in the sesame seeds and red pepper flakes (if using).

Serve: Serve the stir-fry immediately over cooked rice. Garnish with cashews, if desired.

Tips and Variations:

Protein: Add protein like tofu, chicken, or shrimp. Stir-fry the protein first until cooked through, then remove from the skillet and set aside. Add it back to the stir-fry with the sauce.

Other vegetables: You can add other vegetables like bell peppers, snap peas, or carrots.

Spice level: Adjust the amount of red pepper flakes to your preference.

Thickener: If you want a thicker sauce, you can mix 1 teaspoon of cornstarch with 1 tablespoon of water and add it to the stir-fry during the last minute of cooking.

Nuts: Instead of cashews, you can use other nuts like peanuts or almonds for garnish.
