Mashed Cauliflower Rolls with Chicken

 


Ingredients:

For the Cauliflower Dough:

  • 1 medium head cauliflower, cut into florets
  • 2 large eggs
  • ½ cup grated Parmesan cheese
  • ½ teaspoon garlic powder
  • ½ teaspoon salt
  • ½ teaspoon black pepper

For the Chicken Filling:

  • 1½ cups shredded cooked chicken (rotisserie or boiled)
  • ½ cup cream cheese or Greek yogurt
  • 1 teaspoon dried oregano
  • ½ teaspoon paprika
  • 1 teaspoon minced garlic
  • ½ teaspoon salt
  • ½ teaspoon black pepper
  • ½ cup shredded mozzarella cheese

For Topping:

  • ½ cup shredded mozzarella cheese
  • 1 tablespoon chopped parsley


Instructions:

1. Prepare the Cauliflower Dough:

Steam or microwave the cauliflower florets until tender (about 8–10 minutes). Drain well and mash until smooth, ensuring there's no excess moisture.

In a large bowl, combine the mashed cauliflower with eggs, Parmesan, garlic powder, salt, and pepper. Mix until well combined.


2. Make the Chicken Filling:

In a separate bowl, mix the shredded chicken, cream cheese (or Greek yogurt), oregano, paprika, garlic, salt, pepper, and mozzarella cheese. Stir until the mixture is smooth and well combined.


3. Assemble the Rolls:

Preheat your oven to 375°F (190°C) and grease a baking dish.

Scoop a portion of the cauliflower dough and flatten it into a small circle. Add a spoonful of the chicken mixture in the center. Carefully fold the edges of the cauliflower dough around the filling, shaping it into a roll.

Repeat with the remaining dough and chicken mixture. Place the rolls into the baking dish.


4. Top and Bake:

Sprinkle the shredded mozzarella cheese over the top of each roll.

Bake for 20–25 minutes, or until the rolls are golden brown and the cheese is melted and bubbly.


5. Garnish & Serve:

Sprinkle chopped parsley over the rolls for a fresh finish. Serve warm and enjoy this savory dish!
