Zesty Key Lime Bars with a Refreshing Lime Twist


Ingredients:

  • 1 ½ cups graham cracker crumbs
  • ¼ cup granulated sugar
  • 6 tablespoons unsalted butter, melted
  • 1 (14 oz) can sweetened condensed milk
  • ½ cup fresh lime juice (about 4-5 limes)
  • 2 teaspoons lime zest
  • 3 large egg yolks
  • 1 tablespoon all-purpose flour (optional for thicker texture)
  • Extra lime slices and lime zest for garnish


Directions:

  1. Preheat your oven to 350°F (175°C). Grease a 9x9-inch baking pan with butter or line it with parchment paper.
  2. In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Stir until well combined. Press the mixture evenly into the bottom of the prepared baking pan to form a crust. Bake for 8-10 minutes until golden and slightly crisp. Remove from the oven and set aside to cool.
  3. In a separate bowl, whisk together the sweetened condensed milk, lime juice, lime zest, and egg yolks. If you want a slightly thicker filling, add the tablespoon of flour and whisk again.
  4. Pour the lime mixture over the cooled crust. Bake for an additional 15-20 minutes, or until the filling is set and slightly jiggly in the center.
  5. Allow the key lime bars to cool completely in the pan on a wire rack. Once cooled, refrigerate for at least 2 hours before slicing.
  6. Once chilled, slice the bars into squares. Garnish each with a lime slice and a light dusting of lime zest before serving.
