Ingredients:
- 1 ½ cups graham cracker crumbs
- ¼ cup granulated sugar
- 6 tablespoons unsalted butter, melted
- 1 (14 oz) can sweetened condensed milk
- ½ cup fresh lime juice (about 4-5 limes)
- 2 teaspoons lime zest
- 3 large egg yolks
- 1 tablespoon all-purpose flour (optional for thicker texture)
- Extra lime slices and lime zest for garnish
Directions:
- Preheat your oven to 350°F (175°C). Grease a 9x9-inch baking pan with butter or line it with parchment paper.
- In a medium bowl, combine the graham cracker crumbs, granulated sugar, and melted butter. Stir until well combined. Press the mixture evenly into the bottom of the prepared baking pan to form a crust. Bake for 8-10 minutes until golden and slightly crisp. Remove from the oven and set aside to cool.
- In a separate bowl, whisk together the sweetened condensed milk, lime juice, lime zest, and egg yolks. If you want a slightly thicker filling, add the tablespoon of flour and whisk again.
- Pour the lime mixture over the cooled crust. Bake for an additional 15-20 minutes, or until the filling is set and slightly jiggly in the center.
- Allow the key lime bars to cool completely in the pan on a wire rack. Once cooled, refrigerate for at least 2 hours before slicing.
- Once chilled, slice the bars into squares. Garnish each with a lime slice and a light dusting of lime zest before serving.
